Self Portrait Challenge {food and me}

i have been so BUSY, and yet last night i spread roast with mashed potatoes and gravy and butternut squash on the table: three out of five enjoyed the meal. (you might say, that's good; it is the majority. and yet...when i spend a couple hours on dinner (i know, most of that time it was cooking in the oven and i didn't "work," but still, the effort is there, people.) and two children refuse the meal...you have to scrape all that food that didn't go into their bellys into the garbage. you have to hear them say, "I hate squash!" and then have the whole conversation about how the better way to express that is "I really like these potatoes, but I don't really care for squash." it's all very disappointing.)

tonight, i made tacos: five out of five, baby. 15 minutes prep time and i haven't seen my children eat that much in months.

yes. a classic story. two acorn squash have been sitting on my counter for over a week because i know that probably only 2 of 5 will eat them. however, tonight's last minute desperation meal of ramen-with-hot-dog-soup was devoured by 5 of 5. (in my defense, i did cook it with heart-healthy celery and corn, and thus i feel better about myself.) there's a reason these are the only items that appear on the "kids' menu" at most restaurants.

Tacos like this are a tradition in my family...well, my family I grew up in. My husband gets tired of them. I could eat tacos every single day. Your kids are lucky they didn't have my depression era daddy telling them about the time he had to eat squash every single meal...pancakes, bread, dinner, mashed, etc...because they were so poor that was all they could get their hands on! Thanks for making me smile w/ the memories.

I remember those days! I had five children and if squash was mentioned (along with a whole array of other foods) I would hear that buzzer that goes off on game shoes when someone gives the wrong answer. Tacos were a hit, as well as anything that included macaroni and cheese. Now that they are grown up they eat all kinds of things - I was shocked to find out my finickiest eater now eats sushi.

So frustrating! Your kids are really good eaters though. I have seen them and they eat more stuff than my kids do. I learned from Jocie that you let the kid starve and if they get hungry later that night, you pull out the same plate of food and warm it up and let them have at it. I'll have to ask her if she still really does this...I don't have the stamina.

everyone loves tacos...who can blame them? sorry about the squash though...they obviously don't know what they're missing!

Hi Brit!! You want to know my favorite part about this particular post of yours? Well, I loved it all, but thank you specifically for the picture of the taco meal all set up. If you hadn't included it, I may have never stepped out of my box and thought to leave all the taco toppings on the cutting board and just serve. Voila. I'm always hunting for enough tiny bowls--one for the chopped onions, one for the diced tomatoes...you know. Thanks dude!
